Keeping a jar or can piquillo peppers in the cupboard is a great trick have up your sleeve. These small, sweet peppers from northern Spain are a great convenience food. They have been roasted over wood and peeled so there is nothing for you to do except extract them from the jar. (Gently, please; they tear easily.) I love serving them sliced, as a garnish for dishes such as spicy grilled chicken, or stuffing them whole to serve as a pre-dinner nibble with a glass of cold white wine.
