When it comes to modifications, I didn't have leek in my fridge so I used parsnip instead - worked just fine. As a garlic lover I doubled its amount. Also, I replaced ricotta with cottage cheese.
Spicy tofu with Mediterranean cauliflower rice and mixed veg stir fry, braised sprouts with roasted sweet potato and parsnips! Awesome dinner. Not bad for a first-time tofu chef.... I might leave it to press for longer next time or maybe fry it in some sauce, as the chilli flavour only really sat on the surface. 😕Any tips for a tofu novice?
