Dinner is fabulous tonight 🙌🏼❤️🌱 Pasta with fresh tomato 🍅 salad 🥗 with broccoli slaw , red onion , green apples 🍎, pecans , romaine and home made apple cider vinegar dressing with fresh garlic avocado 🥑 oil red onion , red pepper 🌶, cilantro and Dijon mustard ❤️❤️
So maybe it isn't taco Tuesday 🌮but I was STOKED to have these leftovers for lunch after a hot morning chasing a toddler around at the @sandiegozoo 🦁🐯🐻
Both recipes adapted from @carlsbadcravings:
🐔1 1/2 lb chicken breasts
🌶Chili lime seasoning (I skipped the sugar and marinated 3 hours, then grilled!)
🍍Pineapple salsa 🍍
2 cups diced pineapple
1 diced red bell pepper
1/3 cup diced red onion
🍀1/2 cup cilantro
🍈Zest and juice of 1 lime
1/2 tsp cumin
1/4 tsp coriander
Top with avocado and plain Greek yogurt! 🌮

Why do you workout?
When I started I had it all backwards. I HATED my body, I hated what it become. I felt like it had failed me. My thoughts on nutrition were very backwards. I told myself that I was healthy but in all reality I ate whatever and whenever.
The first few weeks of working out I still hated my body, why was I so sore?? I'm active!! Again the reality was that although I have a busy schedule that keeps me moderately active I have not worked out consistently in years.
A year later I now workout because I love my body and I want to treat it right. For years I failed my body, it didn't fail me but now I will treat it right!! #makefithappen#workoutmom#fitmom#healthymom#loveyourself
C O N F I D E N C E 🌻 something I have always struggled with since I was old enough to know what comparison felt like. It wasn't until the last 5-6 months that I have put all of my focus on gratitude and self-love that I have found what it truly feels like to be confident. 💫 I am grateful for the drive that I have, for my passions I possess, for my friendships, for what my body can do, for my hard work ethic in the gym, in the kitchen and in my job, and for my ability to empathize with complete strangers. All of these things are who I am and is a part of what I stand for. I believe in myself and my abilities and it is pushing me to take on something I've been wanting to do for a long time but have been too scared to start. Do not let confidence be confused for being "cocky". If you're proud of who you are and what you stand for, let the world know!
The pictures on the right are embarrassing but there's no way to tell my story without showing them. And as you can see, I used to use my son as a human shield so there are no full body pics of me to be found, I simply never took them. As a new mom, the first year of my son's life was so special to me but I missed out on capturing moments with him because I was too embarrassed to take photographs. The photos on the right show me my heaviest - 5 feet tall and almost 200 lbs. I had high blood pressure, high cholesterol, no energy and was extremely depressed. I thought I was doing the right thing but cutting out red meat and pork from my diet. But I still ate chicken, fish, eggs and dairy. One day I looked in the mirror and decided to STOP. I wanted to stop hiding, stop feeling depressed and stop feeling tired. I decided to go 100 % plant-based. Within weeks the pounds started melting off. I wasn't even working out (still don't get the gym). I just changed my diet. I felt cleaner, lighter, energized and mostly I finally felt like a better mom because I could keep up with my son. Veganism has changed my life and I am so thankful for that. My husband and baby boy are vegan as well. Knowing what I know now, I wouldn't have it any other way.
