Mulled #wine was produced with several different #grape varieties at the end of the harvest, including: Trebbiano, Montepulciano, Malvasia, Montonico, Passerina, Pecorino, Maceratino and others. A bonfire was lit and a copper cauldron filled with grape must was set to boil slowly. As a froth developed on the surface it was immediately removed with a skimmer. The must, after it had been reduced, was left to ferment in chestnut or oak casks and consumed the next year at the earliest.
Well @seacontainersrestaurant last night was delicious... blistered pardon peppers, ceviche, salt cod, truffle mac & cheese, gnocchi, the list goes on! The grilled octopus salad was definitely a stand out though. 📷: @stormpaula
