Shrimp 🍤 curry
1.5lb shrimp 🍤 peeled and Deveined
1/2 cup red ❤️bell pepper
1/2 cup orange bell pepper
1/2 cup yellow💛 bell pepper
1/2 cup 💚green onion
1 cup lite coconut cream
2tsp red curry 🍛 paste
1 tsp curry 🍛 powder
1tsp seasoning salt
1/2tsp cayanne 🌶pepper
1tsp salt for bell peppers
1tbs olive or coconut 🌴 oil
📍Add 1/2 tbs oil to skillet and heat
📍Chop bell peppers and green onions, then add to heated skillet. Cook until tender- approx 8mins
📍Add 1/2 Tbs oil to separate pan and heat.
📍Add shrimp to this pan and cook until pink.
📍Add coconut milk, red curry paste, curry, seasoning salt, coriander and cayanne pepper
📍Bring to a boil. Add in pepper mixture and allow to simmer for 10mins
📍Serve over 🍚rice or wrap in 🥗 lettuce!
