Who doesn’t love a good burger?? 🍔🍔 This is how I’ve transformed one of my favorite foods into a healthier choice that fits into my diet and goals. I sub out a bun for sweet potato discs. I HONESTLY dont even miss the bun because the sweet potato is really freakin good! I also do homemade mayo and lean ground beef!! it’s SUPER easy to make and your fam will love it 😍 .
Just slice the sweet potatoes relatively thing (I wish I had a mandolin slicer for this!) and then toss in melted coconut oil. Season with a bit of salt and pepper and bake on parchment paper in a preheated 400 degree oven. Cook time will vary depending on how thing you make them, so keep an eye on them!!
The mayo is also homemade!! It’s in my IG story right now, BUT all you do is combine: 1 egg yolk, 1 tsp white vinegar, 1 tsp lemon juice, 1/2 tsp honey, 1/4 tsp salt and 1/4 tsp dijon mustard in a food processor. Process together. Then, add LIGHT olive oil or macadamia oil or avocado oil VERY SLOWLY. I’m talking 1 tsp at a time. If you add too much too fast you won’t get a mayo consistency. .
The burgers are grilled, 93% Lean Ground Beef. And of course you need pickles and sautéed onions. GREAT recipe for a Friday night dinner. ✌🏻
